Fan is a new hi-tech business model for the production of organic bakery products set up as a joint venture by two Italian companies with a strong focus on innovation: Farmo, a company specialising in gluten-free and organic produce, and Alce Nero, market leader in the organic product sector.

The operation involved a €5 million investment and was finalised on 29 September with the opening of the new factory in Casorezzo (MI), a 5,000-square-metre plant with high production potential. The facility is equipped with cutting-edge raw materials processing plant and currently has an automatic production line for organic shortbread biscuits (20 SKUs) with a capacity of 600 kg of products/hour.

There are also plans for a further expansion in the savoury bakery segment with the purchase of new dedicated production lines. The new company expects to reach a turnover of €6 million in its first year of business and plans to double this over the following two years and expand exports to around 30 countries.
